After a long day of outdoor activities in Wyoming, it’s also wonderful to take time to relax at the Lodge, watch the beautiful sunset over the Salt River Mountain Range and enjoy a cocktail with dinner. Maggie Pallan, who is the Owner of Artisan Chef, LLC, came to the Lodge recently to serve dinner and cocktails to the Jackson Hole Chamber of Commerce for a corporate retreat. The food she prepared was magnificent! Here is a sampling of her menu…

Grilled Watermelon, Roasted Tomato, Pistachio, and Feta Salad over Baby Arugula with 10 Year Aged Balsamic.

Charcoal Grilled Prime New York Steak with Handmade Worcestershire over Yukon Gold, Super Sweet Grilled White Corn and Black Pepper Bacon Risotto

Fresh Made Ricotta Doughnuts with Chocolate Ganache, Local Raspberry Sauce, and Honey-Almond Crème Anglaise

In addition, Chef Maggie also made the most delightful Blackberry Sage Margaritas! We found this drink recipe to be so different and wonderful, we asked her if we could share this item with you here. If you are dreaming of Wyoming in summer, all you need to do is whip up a batch of these delicious margaritas, sip and enjoy! #ThatsWY

Wyoming BlackBerry Sage Margaritas

To create the blackberry syrup:

1 cup blackberries

3/4 cup sugar

1/4 cup water

Heat this in a small saucepan for 15 minutes, puree and strain. Set aside.

 

To create the sage syrup:

10 rinsed fresh sage leaves

1/2 cup sugar

1/2 cup water

Heat in a small saucepan for 15 to 20 minutes. Strain sage out, and set syrup aside.

 

Ingredients for margarita:

Juice of 3 limes (about 1/3 cup)

1/2 cup Cointreau or Grand Marnier

1/2 cup Tequila

BlackBerry syrup

Ice

Mix ingredients together. Divide into serving glasses. Place 1 teaspoon of the sage syrup on the top of the margarita. A nice garnish is a small skewer with lime wedge, fresh BlackBerry and sage leaf.
